Please note that the appearance of these dyes inside the container can be disconcerting due to the white “mold-like” marks and circular spots on the cocoa chocolate. We can assure you that these spots are not mold, but a natural separation process known as cocoa butter efflorescence or “flower of fat”. This “efflorescence” occurs during the manufacturing process when the dye is cooled or tempered and uneven crystals form. The mold needs water to grow, and chocolate is classified as anhydrous (does not contain water). If you re-melt the colored chocolate, the spots will disappear and it will work and taste as expected.
